There is nothing more gratifying to us than seeing all of the delicious things people are making with our dairy-free products. The versatility of our soy-based frozen desserts and our coconut milk-based beverages, yogurts, and frozen desserts are delectably demonstrated by the creativity of our friends. Simple and Delicious Side Dish
for the Holidays: Maple Mashed Sweet Potatoes
with Pecans!



Welcome to our brand new blog! We hope you'll make yourself at home and share all the fun with us as we venture to make life so delicious.

Ingredients: (gluten-free, dairy-free, soy-free, vegan)

3 pounds sweet potatoes (4-5 large sweet potatoes)
½ cup So Delicious Coconut Milk Beverage (Original or Unsweetened)
1 tablespoon pure maple syrup
½ cup chopped pecans (optional)
dash salt
freshly ground pepper to taste

Directions:

Preheat oven to 400 degrees.

Scrub potatoes and prick all over with a fork. Place on a baking sheet and bake for about 45 minutes, or until potatoes are tender. Remove from oven and allow to cool slightly.

Cut potatoes in half lengthwise and scoop out the flesh into a large bowl. Mash with a hand masher or electric beater (do not use a food processor). Add coconut milk beverage, maple syrup, pecans (if desired), and seasonings. Mix well.

Hint:
These may be prepared a day or two ahead of time and refrigerated. Reheat in a microwave before serving.
